Future of Food is a festival for all, made accessible through a series of events and experiences throughout the week.     Maison François, the modern-day French brasserie and wine bar in St James’s is proud to work with suppliers renowned for their rigorous sustainability practices. The bar team at Maison François will offer a selection of three cocktails priced at £10 each, created using 58&Co Gin who ensure they repurpose all plastic used in the production of their gin, Kinahan’s Whisky whose Black Oak project is reintroducing and replanting rare and native species of trees into areas of Portugal that have been damaged by wild fires and Pensador Mezcal who donate 10% of proceeds from each bottle to their charity partner S.A.C.R.E.D who raise money to underwrite programs in rural Mexican communities that help replant agave, build libraries, ensure water security and repair damage caused by earthquakes.

    Founding owner Lawrence Gomez was born in Gambia surrounded by exotic flavours and ingredients inherent to the cuisine of his home country.

    Papa L's Kitchen is putting African cuisine on the map. They are passionate about creating a unique, shared dining experience, combining the exotic ingredients and flavours of Africa with cuisine from around the world.

    For the Future of Food festival, Lawrence his team will be serving up a Gin & Berry Cooler using sustainable brands and ingredients.

    The Nahua Negroni is a take on a White Negroni, offering a mildly spiced pineapple flavour. The source of the pineapple flavour comes from Tepache, a sustainable-forward fermented drink from Mexico, that puts the entire pineapple to use during production. The yeast lining the surface of the pineapple skin allows the drink to ferment, producing a delicious pineapple beer.  The drink gets its spice factor from a small amount of Jalapeño tincture which provides a sustainability bonus as the leftover jalapeño from the tincture can be used as a garnish.
